I’m not sure a mimic can grapple with a gelatinous cube, but the cube can definitely engulf the mimic. If the cube catches and engulfs the mimic that’s pretty much it. 21 + (6d6) vs (1d8) ? a turn isn’t even a long wait.

I don’t know that the gelatinous cube has enough intelligence to be fooled by the mimic mimicking. Which would mean it’d win, I think.
